My Favourite Cypriot Recipes

Here is a collection of my favourite Cypriot recipes. When I was studying at the University of Cambridge, I had a Cypriot friend named Demetris. One day, he gave me a gift of a Cypriot cookbook since he knew how much I loved to cook. It was called simply Cyprus Cooking, by George Vyras. I have been using that little blue cookbook for over 20 years!

More recently, my Cypriot friend Georgia shared some of her favourite recipes from Cyprus. I love cooking the simple yet flavourful cuisine, which uses a lot of fresh vegetables, spices and herbs.

When I visited Cyprus, I enjoyed the fresh fruits and vegetables. These were delicious in salads as well as cooked in stews. Lamb is a main ingredient for many dishes as well. One of my favourites is the marinated, slow-cooked lamb called kleftiko. However, I did not have a chance to try the tava, roasted lamb stew. Therefore, I was happy to receive the recipe and try making it at home. For vegetarians, there is a big variety of delicious bean and vegetable-based dishes.
