Here is a collection of my favourite Mauritanian recipes. Although I have never travelled to Mauritania, I am lucky to have a friend who is married to a Mauritanian. They have shared some recipes with me, which I have really enjoyed making and eating. I hope one day to visit the country and try the original versions.
Mauritania has the Atlantic ocean to the west, and there is a lot of fish and seafood in the savoury recipes. To the south is Senegal, and there are some overlapping flavours and recipes between the two countries.
