Smores Cookies

At Christmas time, this recipe for Smores cookies is very popular with family and friends. Although they look fancy, the recipe is actually very easy. I’ve left the chocolate chip cookie dough as an ingredient, so you can either use your favourite recipe or pre-made dough. The most important ingredients are the Rolo candies and marshmallows. Also, you will need mini muffin moulds and preferably non-stick silicone ones. Finally, make sure you follow the cooling time or the cookies will be soft and may fall apart when you remove them from the mould.

Chocolate Chip Cookie dough
about 48 Rolo chocolate candies
1 c mini marshmallows
1/2 c dark chocolate chips (optional)


Pre-heat oven to 190C (375F)

First prepare the chocolate chip cookie dough according to the linked recipe. Then spray metal mini muffin tins with cooking spray or use silicon moulds. Shape dough into about 38(1-inch) balls. Place 1 ball into each muffin cup.

Bake for 10 minutes or until the edges begin to brown. Remove from oven. While the cookie is hot, firmly press 1 Rolo (small side down) into the center of each cookie until flush with cookie top. Top each with 3 marshmallows. Bake about 4 minutes longer or until marshmallows are puffed. Cool for 20 minutes. Loosen edges of cookie with a small spatula and remove to cooling racks. Cool completely.

Optional for decoration: Place chocolate chips in a small resealable freezer plastic bag. Microwave on medium about 1 minute. Squeeze the bag and then microwave for 1 minute more or until softened. Gently squeeze bag until chocolate is smooth; cut off a corner of bag. Squeeze the bag to drizzle chocolate over marshmallows. Let stand until hardened, about 10 minutes.
