New Zealand Cheese Scones

My friend from New Zealand shared this recipe for cheese scones, and it has quickly become a baking favourite. First of all, it is very easy and the mixture can be made in one bowl, combining all of the ingredients at once. Secondly, the balls of dough rise into professional-looking scones. Finally, they taste delicious and cheesy straight out of the oven or the next day. I really like the slight sourness of the buttermilk, which makes this recipe for cheese scones slightly different to the British version. And if you are out of cheddar cheese, you can substitute with a (strong) cheese of your choice!

500g grated mature cheddar cheese
600ml buttermilk
600g self-rising flour
1/2 tsp salt
Pinch of cayenne pepper

Mix together buttermilk, cheese, seasoning

Instructions

Pre-heat oven to 180C.

First, in a large bowl, mix together the cheese, buttermilk, salt and cayenne pepper. Next, sift in the flour and mix until the dough comes together. Finally, shape the dough into 12 balls and place on a baking tray lined with greaseproof paper. Leave a couple of inches between each scone.

Bake for 15 minutes or until golden. Cool slightly then serve warm or store in an air-tight container for up to three days
