Pancakes are an American classic breakfast food, and there are many different flavours and varieties. In general, matcha is one of my favourite flavours in desserts. I decided to make a recipe for matcha pancakes and it turned out well. It’s pretty much a normal pancake recipe with added matcha powder. Additionally, I find honey or ginger syrup is a nice complementary flavour, rather than maple syrup. However, go with whatever tastes good to you!
Ingredients
2 cups plain flour
1/2 cup granulated sugar or 10-12 x 3 g packets of stevia
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 3/4 cups buttermilk
1/4 cup milk
1/3 cup unsalted butter, melted
1 tsp vanilla extract
2 large eggs
1 Tbsp matcha powder
Oil for the pan
Instructions
First, combine flour, sugar (or sweetener), baking powder, baking soda and salt in a large mixing bowl. Next, make a well in the centre. Whisk the buttermilk, butter, vanilla and eggs together then pour them into the well in the dry ingredients bowl. Mix together until mostly smooth. Then add the matcha powder and watch the batter turn a wonderful green colour. If the batter is too thick to pour then add a little more buttermilk. Finally, pour the batter into a pitcher or jug for pouring. Let set for 5 minutes.
Heat a nonstick frying pan over medium-low heat and lightly grease pan with either cooking spray or a little vegetable oil. Then pour out batter into circles. Cook until the underside is golden-green and bubbles begin to appear on the surface, flip with a spatula and cook on the other. Repeat until all of the batter is gone.
I like to eat these either with honey or a light ginger syrup. Yum!
