When I asked an Indian friend for her favourite Indian recipes, she shared this recipe for Chili Paneer. It is a popular Indo-Chinese dish and very easy to make with a few ingredients. The most difficult ingredient to find is the paneer, but in the UK we can find that in most supermarkets.
If you are stuck and can’t find any ready-made, it is possible to make it using fresh whole milk. I’ve done it once and it tasted good but took a lot of work! Now I just use the pre-made cubes.
Ingredients
500g paneer cubes
4 Tbsp corn flour
3 Tbsp vegetable oil
1 large onion cut into chunks
2-4 green chilies, chopped
2-3 green, yellow or red peppers, cut into chunks
4 Tbsp ketchup
2 Tbsp red chili sauce
2 Tbsp soy sauce
Instructions
First, in a medium-sized bowl, mix paneer with corn flour. Sometimes, to make it easier to evenly coat the paneer, I shake it in a plastic bag or a covered plastic box. Next, heat the oil in a frying pan over medium heat. Then fry the paneer in oil until browned on all sides, about 8 minutes. Set aside on a plate.
In the same pan, fry the onions until light brown and add green chilies. Fry 2 more minutes. Add peppers and fry for about 5 minutes or until peppers are starting to soften. Finally, add in paneer and the sauces. Heat through and serve hot with rice or naan.
