UK- Chia Pudding Recipe

UK Chia Pudding

This easy recipe for Chia pudding is not specifically from the UK, but I made it there first with UK ingredients. Luckily, you can find the ingredients in many countries. However, they can sometimes be expensive. I tend to buy them in bulk and just store them in an airtight container so I can use them over a few months.

The most important part of this recipe is to ensure that there are enough chia seeds to soak up the liquid and become thick overnight. Then, based on your taste, the yoghurt, sweeteners and berries are all optional. For a creamier consistency, add yoghurt or a similar dairy-free alternative. And for variety, try different syrups and fruits. While I was in the Maldives, we had chia pudding with fresh mango and that was delicious! Recently, I have also seen a combination of overnight oats with chia, and that is tasty too but somehow feels a bit heavier.

Ingredients

500ml of almond milk or coconut milk (drinkable kind)
8 Tbsp chia seeds
4 Tbsp yoghurt or dairy free alternative (optional)
1 tsp stevia or 1 Tbsp maple syrup or honey (optional)
Fresh berries

Instructions

First, soak the chia seeds in the almond or coconut milk for at least an hour and preferably overnight. Stir occasionally at the start to break up any clumps. Before serving, mix with the yoghurt and sweetener, if you decide to add one. Finally, pour the chia pudding into a dish and serve with berries on top. Clear dishes or jars are nice so you can see the colours and interesting consistency.
