In general, Greenland does not grow many fresh foods such as fruits or vegetables. However, there is a lot of delicious, fresh seafood including fish. Usually in the UK, halibut is very expensive and not easy to get. In Greenland, it was much easier to find and, relative to other food in Greenland, it was a reasonable price (still expensive though). I even had halibut Thai curry at a restaurant in Ilulissat. This recipe for halibut is simple, but it does rely on sourcing some fresh fruits and vegetables. It’s based on this recipe for halibut from Royal Greenland.
Citrus fruits were usually available in the Greenland supermarkets. On the other hand, lettuce for salad was more difficult to find. However, one can always substitute tinned vegetables including green beans and beetroot to make the salad. Most vegetables will taste good tossed in the citrus marinade.
If you have an air fryer, then that is an easy way to cook the fish. It cooks the fish quickly and browns it a little on the top. Alternatively, you can use the BBQ or oven. The citrus marinade gives the fish a fresh and simple flavour.
Ingredients
600g halibut fillets
1 lime
1 lemon
1 orange
Mixed green salad for garnish
Tin of beet root
Bunch of parsley, shopped
50 ml olive oil
Salt and pepper to taste
Instructions
First, zest the lime, lemon and orange. Put the zest into a medium bowl, Next, juice the fruits and add juice into the bowl. Also add the oil, and salt and pepper to taste. Marinate the halibut in 3/4 of the marinade. Cover and keep in the refrigerator for at least an hour.
In the meantime, prepare the side salad. First, cut beets into small pieces and put them into a salad bowl. Toss with the mixed greens and parsley. Set aside.
When the halibut has been marinated, remove it from the refrigerator and grill for about 10-12 minutes. On the BBQ, you can use a grilling plate. Alternatively, you can also cook the fish in an air fryer at 180C for about 8 minutes, then raise the heat to 200C for 4 more minutes.
Just before serving, toss the salad with the remaining 1/4 of the marinade. Serve the grilled halibut with a side of salad.
