Flautas and taquitos are some of my favourite snack foods. Flautas are made with flour tortillas, and taquitos with corn tortillas. Often they can be referred to on menus as rolled tacos, and the fillings can include cheese, chicken, beef, or potato. Flautas originate in Mexico, although there are many different variations. This recipe for sweet potato flautas has a vegetarian filling, and I made them in the air fryer rather than deep-frying them. They still get nice and crispy, and taste delicious with toppings of your choice.
In fact, this filling is not traditional but I used some components of Mexican foods such as the black beans, chipotle and spices. Therefore, it has some Mexican flavour in the vegetarian filling. I like the slight sweetness from the sweet potatoes. However, if you want to try some traditional rolled tacos and are in San Diego then I definitely recommend Cotixan!
Ingredients
1 large sweet potato, peeled and cut into 1/2 inch pieces
1 tsp vegetable oil
Oil spray
1/2 c chopped onion
1 clove garlic, minced
1 tin (400g) black beans, drained and rinsed
1 chipotle pepper in adobo sauce chopped or 1 tsp chipotle chile powder
1/2 tsp cumin
1/2 tsp paprika
150-200g Mexican cotija or feta cheese, crumbled
8 flour tortillas
Toppings
Guacamole
Salsa
Grated cheese
Chopped onion
Chopped fresh chile
Instructions
First, put the sweet potato pieces into the air fryer basket. Spray sweet potatoes with oil. Cook at 180C (350F) for 15-18 minutes, stopping once or twice to shake the basket. The sweet potatoes should be lightly browned and soft.
Next, add oil to a large skillet and saute onions and garlic over meduim heat for a few minutes, until translucent. Then add black beans, chipotle pepper, cumin, and paprika. Simmer for two minutes. Remove the pan from heat. Finally, add the cooked sweet potatoes and cheese to the skillet.
Put about 4 Tbsp of the filling in a single row across the tortilla. The row should be closer to one edge, off from center. Grab the end of the tortilla, and fold it over the mixture, rolling it up like a cigar. Place the rolled tortilla seam-side down and repeat for the remaining tortillas.
Lightly spray the air fryer basket with oil. Then place 3-4 flautas seam-side down into the air fryer. Lightly spray the flautas with oil. Finally cook at 200C (400F) for about 5 minutes, then carefully flip over and cook for about 4 minutes longer or until golden brown. Serve warm with preferred toppings.
