This recipe for zaalouk is another delicious Moroccan recipe from my friend Ikram. When I asked her for some suggestions, she sent me a lot of different recipes. Since then, I have been trying to cook them all over time. All of these ingredients were easy to find in the supermarket in London. In fact, I had most of the ingredients already at home. One modification I made was to cook the aubergine in the air fryer instead of the oven. In general, I find the air fryer browns vegetables really well and it takes less time than in the normal oven.
The recipe for zaalouk is based on an Instragram account called Lifewithnisrine. Many of her recipes and photos look amazing!
Ingredients
1 aubergine
2 garlic cloves, peeled and sliced
Pinch of paprika
Pinch of cumin
Salt
2 Tbsp olive oil
Sauce
2 Tbsp olive oil
2 tomatoes, blended
1 Tbsp tomato paste
1 Tbsp fresh coriander, chopped
1 Tbsp fresh parsley, chopped
Salt to taste
1 tsp cumin
1 tsp paprika

Several green olives (optional)
3 lemon slices
Slices of bread
Instructions
Pre-heat the oven to 200C (400F)
First, score the aubergine with a knife diagonally in both directions. Next, push the garlic slices into the slits. Then sprinkle with the paprika, cumin and salt. Finally, drizzle with olive oil.
Put onto a foil-lined tray and bake for 15 minutes, until the aubergine is lightly browned.
Alternatively, you can use the air fryer. Prepare as described above and cook for 15 minutes at 190C
Next, in a frying pan, add the olive oil, blended tomatoes, and tomato paste. Cook over medium heat for about 5 minutes. Then scoop the grilled aubergine out of the skin and add this to the pan. Add the herbs and seasoning.
Finally, transfer the mixture to a serving bowl. Top with a few olives and lemon slices, and serve with bread.
