Peanut Butter Bars

Sometimes, when I am hoping to make cookies and I don’t have a lot of time, I make this recipe for peanut butter bars instead. It has the same delicious taste and consistency of cookies, but I can bake it in one pan rather than shaping cookies. The dough is similar to normal cookie dough, and the only tricky part is to make sure it is baked through but does not dry out. You can bake them in a metal, glass or silicone baking tray. I prefer silicone so I know that it won’t stick, and I don’t need to do any preparation.

This recipe for peanut butter bars is a classic American flavour combination of peanut butter and chocolate, which is always delicious!

Semi-sweet chocolate chips
Crunchy peanut butter

Ingredients

250g (a little more than 1 cup) unsalted butter, at room temperature
1 cup peanut butter
1 1/2 cups light brown sugar
1/2 cup sugar
1 large egg + 1 large egg yolk
2 tsp vanilla extract
2 3/4 cups all-purpose flour
1 tsp cornstarch
1/2 tsp baking powder
Pinch of salt
2 Tbsp milk
2 cups semisweet chocolate chips

Instructions

Preheat oven to 175C (350F). First, line a 9×9 inch pan with parchment paper or use a silicon pan. Next, in a large mixing bowl, cream together butter, peanut butter, and sugars until well mixed. Then fold in the egg, egg yolk, and vanilla extract.

In a separate bowl, sift together flour, cornstarch, baking powder, and salt. Then gradually add flour mixture to butter mixture until completely combined. Add milk and stir again. Finally, fold in chocolate chips.

Transfer batter to the 9×9 inch pan and spread evenly. Bake for 35 minutes or until edges are just beginning to turn golden brown. Remove from the oven and allow to cool for at least 15 minutes before cutting and serving.
