In the wintertime, this recipe for orange fennel salad is a delicious dish that uses ingredients of the season. A friend from Sicily shared this recipe with me and said that it is very typical. It’s very simple and quick to make. Additionally, it can keep in the refrigerator for a couple of days, unlike salads made with lettuce. The salad is crisp, and the sweetness of the oranges balances the slight bitterness of the fennel. And the dressing adds the acidity. Interestingly, when we ordered an orange fennel salad at Piccola Cucina Estiatorio in NYC, the salad was even simpler with no olives nor red onions. Ingredients
2 oranges, peeled and sliced
1 fennel, sliced
1/2 sweet onion, thinly sliced
1/2 c black olives or 1/4 c anchovies, chopped
1 tsp white wine vinegar
1 Tbsp olive oil for drizzling
Instructions
Put all solid ingredients into a salad bowl. Then drizzle with olive oil and vinegar. Serve chilled.
