Naked Bars

This recipe for naked bars is simple and healthy, based on nuts and dates with no added refined sugar. Although I have used peanut butter, you can also use cashew or almond butter or any nut of your choice. Additionally, you can substitute coconut for other toppings according to your taste. I like to add cocoa nibs in the mixture for a little extra crunch.

These do have to be stored in the refrigerator since there are no preservatives. However, they can last in your bag if you take them out all day. In fact, I often take these as my snack at work or when I go out hiking. These taste very similar to the plain Nakd bars you can buy at the supermarket.

Ingredients

800g dates
340 g peanut butter or any other nut butter
100 g ground almonds
5 Tbsp cocoa powder
3 Tbsp cocoa nibs (optional)
Grated coconut to sprinkle on top

Instructions

First, pit the dates and put them into a large food processor. Next, add peanut butter, ground almonds, cocoa powder and cocoa nibs (optional). Process on pulse until almost smooth.

Spread mixture onto a baking tray with sides. Finally, sprinkle with grated coconut. Refrigerate for at least one hour. Cut into squares and serve. These can be frozen for later!

Note: Be careful that your food processor can process the thick mixture. I broke my attachment making a batch of these!
